After an Avast update explorer.exe would not run automatically anymore, I uninstalled Avast after trying all other solutions I found online, the problem still persists and now I am unable to switch on my windows defender real-time protection. Any help?

Your problem is relatively rare, and might not be caused by Avast in the first place (there is no reason for antivirus to stop exporer.exe). If anything, it looks like malware infection that disables all your Windows defenses in the background.
Nevertheless, you should check the solutions we provide in the following article "How to fix Explorer.exe error on Windows 10?"
If none of the methods listed in the article are helpful, you should access the Windows Registry editor (in Windows search, type in "regedit" and hit Enter).
Once there, navigate to the following location: HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows NT\CurrentVersion\Image File Execution Options. If you spot "explorer.exe" or "iexplorer.exe" of the right side - delete them, as they should not be there.
Finally, you should access Safe Mode and check whether the issue persists there. If it does, it means that the culprit is malware, and you should perform a full system scan with antivirus software while in Safe Mode.
Good luck,
